Spring has sprung and I always love to try and shop for in-season produce for my family. If you’re willing to try out new produce—picky eaters too—try some of these healthy swaps and you may be surprised!
- Watercress
- This green is full of vitamin K and adds a spicy kick to salads, similar to arugula!
- Broccoli Rabe
- Packed with even more iron and calcium than regular broccoli, this green is great sauteed!
- Garlic Scapes
- If you like garlic, these stems of the garlic plant are a great way to add vitamin C to your soups, stir fries, and sauces.
- Baby Bok Choy
- Milder than regular bok choy, and may have cancer-fighting elements.
- Scallions
- Full of infection-preventing allicin, along with vision-protecting lutein and zeaxanthin, these are a great meal topper or addition to any meal!
- Asparagus
- In its peak from April through June, this bright-green veggie is packed with good-for-you vitamins and minerals like vitamins A, C, E, K, and B6, as well as folate, iron, copper, calcium, protein, and fiber.
- Artichokes
- This veggie can help contribute to lowering your bad cholesterol and increasing your good cholesterol, plus aids in improving the digestive system!
